the beef/cheese shell meal looks like something even Erin would like. I LOVE stuffed shells.

I see you discovered the "planning 5 different meals is way too much food" secret. Plus it can be overwhelming to cook 5-7 meals each week without a break. Planning 3 meals a for the weekdays seems to work well for us with the option of a 4th meal.

yeah, it was just too hard to make 5 meals a week and it was rather unrealistic as well. We're only 2 people... well 2 1/2, so we always have leftovers. It just made more sense to make 3 meals. Plus we will go over to Nick's parents house for dinner randomly too so this takes that into account as well.
